The inspiration behind the name Maíz Cocina De Origen stems from the age-old Mexican adage: “Sin maíz no hay país” (Without corn, there is no country). Conceived in 2017 while residing in McAllen, Texas, the idea for this project took root. When the pandemic struck, a sense of frustration with using plastic containers for food prompted my wife and me to elevate the concept. We decided to breathe life into the project, culminating in our inaugural "pilot" dinner on February 7, 2021. Since that momentous day, we have ardently nurtured and sustained this dream
